Meet Chef

Chef Mark began his culinary journey at the young age of 15, taking summer jobs washing dishes in restaurant kitchens. As he gained experience, he was invited to cook in those same kitchens, returning each summer throughout high school. Although he pursued a Bachelor of Science in Fine Art and Art History, Chef Mark had already set his sights on a career in restaurants. After college, he quickly found himself working professionally in Washington, D.C., and soon moved to New York City to cook under Chef Charlie Palmer at the renowned Aureole Restaurant. This experience opened doors, ultimately leading him to Las Vegas to launch Aureole at Mandalay Bay Resort and Casino for Chef Palmer.

Chef Mark's career continued to soar when he was hired to run the kitchen at Alize, a fine dining restaurant at the Palms Resort and Casino, where he It was here that he met his wife, pastry chef Tammy. After 11 years at Alize, Chef Mark transitioned to Station Casinos, where he expanded his expertise, overseeing multiple outlets within hotels and casinos, a departure from his single-restaurant experience.

During his time with Station Casinos, Chef Mark developed a keen interest in physical fitness and health span. He and his wife embarked on a journey to learn more about nutrition and fitness, achieving significant weight loss and a new level of wellness. This transformation underscored the importance of intentional meal planning, or “meal prep,” which became central to his approach.

Recently, he deepened his culinary expertise by earning a certification in Ayurveda, the ancient holistic science of health and wellness. Inspired by the principles of Ayurvedic cooking, Chef Mark now envisions a cuisine that prioritizes well-being at every step, blending flavors with purpose and intention. His goal is to offer an experience where each dish is thoughtfully designed to nourish both the body and soul. With this certification, Chef Mark is committed to wellness-driven cooking balanced with culinary artistry, inviting his clients to savor food that supports longevity, vitality, and overall wellness.
